Ever want to indulge without the guilt? We have the perfect recipe for you. Creamy and crunchy with just the right amount of sweetness, this paleo no-bake cheesecake is free of added sugar and dairy. Let’s jump into the making of this delicious treat created with one of my best friends, Anyssa.
First of all, this recipe is to make five mini cheesecakes. Adjust our measurements accordingly. Start off with soaking one cup of raw cashews overnight or until they are soft enough to blend. After that, it’s time to make the crust. Grab a cup of raisins, a cup of raw almonds, and a pinch of salt and blend together in a food processor until they reach the consistency shown below.
Press a half-inch layer of the mix into the bottom of your cheesecake cups to create the crust.
Next, blend the soaked cashews, two tablespoons of coconut oil, a tablespoon of honey, and the juice of one lemon in a food processor, once again reaching the consistency shown below.
Smooth about an inch of cream on top of each of the crusts and then they are ready to be popped into the freezer overnight.
We warmed up some frozen berries to top off our paleo no-bake cheesecakes in the morning.
We really enjoyed these cheesecakes and would highly recommend you try them out! You can always make variations on them by mixing the cashews with some cocoa powder or acai powder for a unique twist on this recipe.
